In Japanese culinary terms, this texture embodies shitazawari and hazawari. Shitazawari describes the refined, delicate softness of the flesh, while hazawari captures the subtle resistance or “bite” that gives sashimi and sushi their essential structure. Its scientific name, Lates calcarifer, reflects a species uniquely adapted to both saltwater and freshwater environments. The name “barramundi” comes from an Aboriginal Australian word meaning “large-scaled river fish,” grounding it firmly in its origin. Today, it’s recognised globally as a distinctive sea bass, valued not just for its heritage, but for its place among the world’s most sought-after white fish species.
